Vinification
Manually harvested grapes into 12kg boxes and thoroughly selected at the choosing table. Fermentation occurred in inox vats at a controlled temperature with many reassemblies during the process. 18 months staging in new and used French oak barrels.
Tasting Notes
The 2016 edition of Convento do Paraíso Red presents a very lively and complex nose, notes of fresh red berries and some balsamic, with the barrel in the background. On the mouth the wine is very sharp, structured but elegant, fresh with a long finish.
